Golden Ghee with Turmeric and Spices

Ingredients

  • 500g good quality unsalted butter cut in chunks
  • 1 inch fresh turmeric root in pieces
  • 2 sticks of cinnamon
  • 1/4 tsp black peppercorns and cloves
  • 1/2 tsp cardamom pods slightly open
  • Few pieces of mace and star anise
  • 1 tsp salt

Preparation

  1. Add everything in a mixing bowl of Thermomix, melt on 100 degrees for 10 minutes on reverse blade on speed 2.

  2. Remove the mixing cup from the top and cook on Varoma for 65 minutes on reverse blade on speed 2.

  3. Leave the ghee with all those spices for at least 4 hours or overnight.

  4. Strain it well with cheesecloth.

  5. Store it in a clean glass bottle.
