Healthy Vegetable Soup with Milk

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 large onion
  • 2 cloves garlic
  • 1 tablespoon ginger
  • 2 large carrots
  • 1 cup peas
  • 1 cup mushrooms
  • 1 cup broccoli
  • 1 cup corn
  • 1 medium potato
  • 1/4 cup flour
  • 1.5 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon coriander
  • 4 cups milk

For serving

  • Parsley

Preparation

  1. Melt butter and heat olive oil in a large pot over medium heat.

  2. Add onion, garlic, and ginger, and sauté until softened and fragrant.

  3. Stir in carrots, peas, mushrooms, broccoli, corn, potato, flour, salt, black pepper, oregano, thyme, and coriander until well combined.

  4. Gradually pour in milk while stirring constantly to prevent lumps.

  5. Bring the mixture to a simmer and cook until the vegetables are tender.

  6. Remove from heat and prepare for serving.

Serving suggestions

  1. Garnish with parsley before serving.
