Homemade Raspberry Chia Jam

Ingredients

  • 400g fresh raspberries
  • 2 tbsp water
  • 40g chia seeds
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract

Preparation

  1. Place the raspberries and water in a pan, then cover and simmer on a medium to low heat for 5 mins. Stir regularly and use the back of a wooden spoon to crush the raspberries

  2. Add all other ingredients, stir well and simmer for another 2 mins. Turn off the heat, remove the lid and allow to cool. As the jam cools, it will begin to thicken

  3. Once cooled, transfer to an airtight jar and keep in the fridge for up to two weeks
