Homemade Vegan Pesto Lasagne with Vegetables
Ingredients
- 1 onion
- 3 cloves garlic
- oil
- mushrooms
- no chicken pieces
- plain flour
- vegetable stock
- broccoli
- pesto
- béchamel sauce
- vegan cheese
- herbs
- pine nuts
Preparation
Fry 1 onion and 3 cloves of garlic in oil until soft.
Add mushrooms and fry for another 3 minutes.
Add no chicken pieces, sprinkle with plain flour, add vegetable stock and broccoli, then simmer until thick.
Add pesto and mix well.
Use pre-made béchamel sauce for layering.
Layer everything in a lasagne dish, cover with vegan cheese, and sprinkle with herbs and pine nuts.
Bake in the oven for about 30 minutes until done.
Tip: For better flavor, consider adding a basic tomato sauce between layers next time.
