Homemade Vegan Pesto Lasagne with Vegetables

Ingredients

  • 1 onion
  • 3 cloves garlic
  • oil
  • mushrooms
  • no chicken pieces
  • plain flour
  • vegetable stock
  • broccoli
  • pesto
  • béchamel sauce
  • vegan cheese
  • herbs
  • pine nuts

Preparation

  1. Fry 1 onion and 3 cloves of garlic in oil until soft.

  2. Add mushrooms and fry for another 3 minutes.

  3. Add no chicken pieces, sprinkle with plain flour, add vegetable stock and broccoli, then simmer until thick.

  4. Add pesto and mix well.

  5. Use pre-made béchamel sauce for layering.

  6. Layer everything in a lasagne dish, cover with vegan cheese, and sprinkle with herbs and pine nuts.

  7. Bake in the oven for about 30 minutes until done.

  8. Tip: For better flavor, consider adding a basic tomato sauce between layers next time.
