Honey Garlic Chicken Stir Fry
Ingredients
- 1 cup uncooked rice
- 1 tbsp butter
- 2 chicken breasts
- 1 red bell pepper
- 1 head of broccoli
- 1/2 an onion (white or red)
- 4 garlic cloves
- 1/4 cup soy sauce OR tamari
- 2-3 tbsp honey (taste & adjust)
- 1/4 cup water or broth
- 1 tbsp cornstarch
- Sesame seeds for garnish (optional)
Preparation
Cook rice according to package instructions
Wash and dice the vegetables, and mince the garlic
Pat dry the chicken and dice it into 1-inch cubes
Add avocado oil to a large skillet, add the chicken, spread it apart, season with salt and pepper, and cook for 3 minutes per side
Remove the chicken and add another drizzle of oil, then add red pepper and onions
Cook for 4 minutes until soft
Whisk together the sauce ingredients: soy sauce, minced garlic, honey, water, and cornstarch
Add the cooked chicken and broccoli
Add the sauce and let everything simmer for 3 minutes
Serve over rice and optionally garnish with sesame seeds
