Honey Garlic Chicken Stir Fry

Ingredients

  • 1 cup uncooked rice
  • 1 tbsp butter
  • 2 chicken breasts
  • 1 red bell pepper
  • 1 head of broccoli
  • 1/2 an onion (white or red)
  • 4 garlic cloves
  • 1/4 cup soy sauce OR tamari
  • 2-3 tbsp honey (taste & adjust)
  • 1/4 cup water or broth
  • 1 tbsp cornstarch
  • Sesame seeds for garnish (optional)

Preparation

  1. Cook rice according to package instructions

  2. Wash and dice the vegetables, and mince the garlic

  3. Pat dry the chicken and dice it into 1-inch cubes

  4. Add avocado oil to a large skillet, add the chicken, spread it apart, season with salt and pepper, and cook for 3 minutes per side

  5. Remove the chicken and add another drizzle of oil, then add red pepper and onions

  6. Cook for 4 minutes until soft

  7. Whisk together the sauce ingredients: soy sauce, minced garlic, honey, water, and cornstarch

  8. Add the cooked chicken and broccoli

  9. Add the sauce and let everything simmer for 3 minutes

  10. Serve over rice and optionally garnish with sesame seeds
