Stir-Fried Chicken with Mushrooms and Bell Peppers

Ingredients

  • 250g thinly sliced chicken
  • 250g coarsely shredded oyster mushrooms
  • 1 red bell pepper, sliced lengthwise
  • 1 green bell pepper, sliced lengthwise
  • 250 ml water
  • 1 tsp cornstarch dissolved in 2 tsp water
  • 1 tsp sesame oil

Sauce

  • 3 tbsp oyster sauce
  • 1 tsp sweet soy sauce
  • 1 tsp soy sauce
  • Salt, pepper, and sugar to taste

Spice paste

  • 7 shallots
  • 5 garlic cloves

Preparation

  1. Wash the chicken thoroughly. Season with salt and pepper to taste. Refrigerate for 20 minutes.

  2. Sauté the ground spice paste until fragrant. Add the chicken and stir until it changes color, then add water and all sauce ingredients.

  3. Wait for it to boil, then add the oyster mushrooms followed by the bell peppers. Adjust the seasoning.

  4. Cook until all ingredients are done, thicken with the cornstarch slurry. Remove from heat and serve.
