Lentil & Brussels Sprouts Bowl
Ingredients
- 1.5 cups dry green or brown lentils
- 5 cups water
- 2 bay leaves
- 2 tablespoons extra virgin olive oil
- 1/2 red onion, diced
- 2 garlic cloves, minced
- 2 (12oz) bags shredded brussels sprouts
- 1 teaspoon oregano flakes
- salt and pepper
- pinch of red pepper flakes
- sausage of your preference (i used @noevilfoods), sliced
- to top: avocado, crumbled feta cheese
Preparation
Combine the lentils, water, and bay leaves in a medium pot and bring to a boil
Once boiling, reduce heat to low and simmer until tender, about 15 minutes
If there is still water and lentils are tender, drain into a colander
Heat the olive oil in a large skillet over medium-high heat
Once oil is shimmering, add onions and garlic and cook until onions are translucent, about 5 minutes
Add the brussels sprouts, season with oregano, salt, pepper, and red pepper flakes and toss to combine
Cook for 10-15 minutes or until sprouts are bright green and fork tender
While sprouts and lentils are cooking, cook whatever sausage you'd like to use
I simply heated up my sausages in a pan over medium heat until warmed through
Once the lentils and sprouts are done cooking, add the lentils to the skillet with the sprouts and toss well to combine
Divide the mixture into bowls, top with cooked sausage, avocado and feta cheese
Serve
