Pecan Banana and Date Bars

Ingredients

  • 100g pecans
  • 100g walnuts
  • 50g sunflower seeds
  • 50g pumpkin seeds
  • 6 medjool dates (stoned)
  • 1 large banana
  • 1 tbs coconut oil
  • 1/2 tbs cinnamon

Optional additions

  • maple syrup (to taste)
  • raisins
  • oats

Preparation

  1. Preheat oven to 180 degrees.

  2. Put all the nuts and seeds in a blender and blitz. Transfer to a bowl.

  3. Put all the other ingredients into the blender and whizz to make a paste.

  4. Add this paste to the nuts and combine thoroughly.

  5. Cover a small baking tray with baking paper and spread mixture out evenly.

  6. Bake for 20-25 minutes.

  7. Cool, then cut.
