Roasted Garlic Hummus with Lemon and Spices
Ingredients
- 8-12 cloves garlic
- Avocado oil
- 2 cups chickpeas
- 2 tablespoons tahini
- 1-4 tablespoons olive oil
- Himalayan salt to taste
- Juice from 1 lemon
- 1/4 cup filtered water
- 1 tsp cumin
- Red pepper flakes optional
- Smoked or regular paprika
- Parsley
- EVOO
Preparation
Roast 8-12 cloves of garlic tossed in avocado oil at 375°F for approximately 30 minutes until caramelized and golden.
In a food processor, add 2 cups chickpeas, the roasted garlic, 2 tablespoons tahini, 1-4 tablespoons olive oil, Himalayan salt to taste, juice from 1 lemon, 1/4 cup filtered water, 1 tsp cumin, and red pepper flakes if desired.
Purée on high until smooth and creamy.
Top with smoked or regular paprika, additional roasted garlic cloves, parsley, and a drizzle of EVOO if desired.
Tips
You can replace tahini with zucchini and water to lower fats.
