Roasted Garlic Hummus with Lemon and Spices

Ingredients

  • 8-12 cloves garlic
  • Avocado oil
  • 2 cups chickpeas
  • 2 tablespoons tahini
  • 1-4 tablespoons olive oil
  • Himalayan salt to taste
  • Juice from 1 lemon
  • 1/4 cup filtered water
  • 1 tsp cumin
  • Red pepper flakes optional
  • Smoked or regular paprika
  • Parsley
  • EVOO

Preparation

  1. Roast 8-12 cloves of garlic tossed in avocado oil at 375°F for approximately 30 minutes until caramelized and golden.

  2. In a food processor, add 2 cups chickpeas, the roasted garlic, 2 tablespoons tahini, 1-4 tablespoons olive oil, Himalayan salt to taste, juice from 1 lemon, 1/4 cup filtered water, 1 tsp cumin, and red pepper flakes if desired.

  3. Purée on high until smooth and creamy.

  4. Top with smoked or regular paprika, additional roasted garlic cloves, parsley, and a drizzle of EVOO if desired.

Tips

  1. You can replace tahini with zucchini and water to lower fats.

  2. Dip with your favorite veggies or gluten-free chips for a tasty snack.
