Roasted Peach and Goat Cheese Tart with Honey

Ingredients

  • 1 14-oz. package puff pastry, thawed according to package directions
  • 1 pound peaches, pitted and cut into 1/2-inch wedges (about 3 large peaches)
  • 4 oz. plain or honey goat cheese, softened to room temperature
  • 2 tbsp. coconut sugar or any granulated sugar
  • 1 1/2 tsp. ground black pepper
  • 2 tbsp. honey
  • Flaked salt
  • Fresh thyme

Preparation

  1. Preheat oven to 400°F and line a baking sheet with parchment paper. Wash and slice peaches into 1/2-inch wedges and set aside.

  2. Remove thawed pastry from box, roll out onto floured parchment paper to a large rectangle about 15x10 inches. Prick with a fork in the middle of the pastry leaving a 1/2-1 inch border around the edges, then slide parchment paper onto baking sheet.

  3. Smear the goat cheese all over the middle of the pastry where you pricked the holes and layer the peaches in rows of 4, slightly overlapping.

  4. Sprinkle peaches with sugar and black pepper and bake for 30 minutes until edges of pastry are golden and puffed.

  5. Remove from oven and let cool, then sprinkle with flaked salt, drizzle with honey, and add some fresh thyme.
