Thai Pomelo Salad with Fresh Herbs

Ingredients

  • 1 organic pomelo
  • 1 small to medium cucumber
  • 1 red pepper
  • 1/4 cup shallots or purple onion
  • 1/4 cup fresh basil or mint
  • 1/4 cup coriander leaves
  • 1/4 cup sprouted cashews
  • 2 Tbsp. shredded unsweetened coconut
  • 1 red chili (optional)

Dressing

  • 1/3 cup lime juice
  • 1 Tbsp. coconut aminos sauce
  • 2 to 2.5 Tbsp. birch xylitol
  • 1/3 to 1/2 tsp. chili flakes

Preparation

  1. Peel and section the pomelo.

  2. Dice the cucumber and red pepper.

  3. Chop the shallots, basil or mint, and coriander leaves if necessary.

  4. In a large bowl, combine all salad ingredients.

  5. In a small bowl, mix all dressing ingredients together.

  6. Pour the dressing over the salad and toss to combine.

  7. Serve immediately.
