Thai Pomelo Salad

Ingredients

  • 1 organic pomelo • 1 small to medium cucumber
  • diced • 1 red pepper
  • diced • 1/4 cup finely chopped shallots or purple onion • 1/4 cup fresh basil or mint
  • chopped if leaves are large • 1/4 cup chopped fcoriander leaves • 1/4 cup sprouted cashews • 2 Tbsp. shredded unsweetened coconut • you can also add 1 red chili
  • minced ~ and for the dressing: • 1/3 cup fresh-squeezed organic lime juice • 1 Tbsp. coconut aminos sauce • 2 to 2.5 Tbsp. birch xylitol • 1/3 to 1/2 tsp. chili flakes
