Thai Pomelo Salad with Fresh Herbs
Ingredients
- 1 organic pomelo
- 1 small to medium cucumber
- 1 red pepper
- 1/4 cup shallots or purple onion
- 1/4 cup fresh basil or mint
- 1/4 cup coriander leaves
- 1/4 cup sprouted cashews
- 2 Tbsp. shredded unsweetened coconut
- 1 red chili (optional)
Dressing
- 1/3 cup lime juice
- 1 Tbsp. coconut aminos sauce
- 2 to 2.5 Tbsp. birch xylitol
- 1/3 to 1/2 tsp. chili flakes
Preparation
Peel and section the pomelo.
Dice the cucumber and red pepper.
Chop the shallots, basil or mint, and coriander leaves if necessary.
In a large bowl, combine all salad ingredients.
In a small bowl, mix all dressing ingredients together.
Pour the dressing over the salad and toss to combine.
Serve immediately.
