Vegan Chocolate Cupcakes with Frosting
Ingredients
Batter
- 100 g flour
- 80 g brown sugar
- 2 tbsp cacao powder
- 1/4 tsp baking powder
- 120 ml non-dairy milk
- 2 tbsp coconut oil (melted)
Frosting
- 150 g soft margarine
- 70 g powdered sugar
- 1/4 tsp vanilla
- 150 g dark chocolate
- 1 tbsp coconut oil
Preparation
Mix all the ingredients for the batter and divide evenly between the 6-8 cups, filling them about 3/4 full.
Bake for 15 minutes at 180°C.
Allow to cool completely.
In the meantime, beat margarine, powdered sugar and vanilla until smooth.
Frost the cupcakes as desired.
Melt the dark chocolate with the coconut oil.
Let it cool for 15 minutes.
Holding each cupcake by its bottom, dip in the chocolate to coat the frosting, allowing excess to drip off.
Let stand until set.
