Vegan Chocolate Mousse
Ingredients

- 1 cup coconut milk > Nestle Simple 1 &1/2 cup chocolate chips
- >2 cans coconut cream whipped (in the fridge overnight or a few hours)
- >1 cup of aquafaba whipped stiff peaks >2 tsp Cream of Tartar >1 cup powdered sugar
Preparation
In a sauce pot, gently heat the milk to a simmer and add the chocolate chips
Gently whisk together until incorporated and remove from the heat
In a mixing bowl whip the coconut cream until you see the solid fats are incorporated and smooth
Set aside >in a different mixing bowl whisk the aquafaba & cream of tartar until medium peaks
Then slowly add the sugar to the aquafaba while whisking
Should see a nice gloss coming from it
In a different mixing bowl add all of the chocolate mixture in
Add one cup of the whip cream and aquafaba into the chelate and begin to fold
It’s very important that you fold and don’t whisk
You want to protect the air bubbles you desperately created and just incorporate
Continue this process until it’s all gone
You may keep it in that mixing bowl but if you transfer it just be careful
