Raw Vegan Blueberry Cheesecake
Ingredients
- 2 cups of raw cashews
- 1/2 cup frozen blueberries
- 1/4 cup raw agave nectar (or maple syrup instead)
- 1/4 cup raw macadamia nuts
- 1/4 cup raw walnuts
- 1 tablespoon extra virgin coconut oil
- 2 pitted dates
- pinch of sea salt (optional)
Preparation
Soak cashews for 8 hours and add to blender
Add blueberries to blender
Add agave nectar (or maple syrup) to blender
For the crust: Add nuts to food processor
Add coconut oil to food processor
Add dates to food processor
Add sea salt to food processor
Pulse until coarsely chopped
Coat springform molds with coconut oil
Press crust into mold
Add blueberry mixture to the mold
Freeze overnight
Transfer to refrigerator
Add strawberries or other fruit and enjoy
