Raw Vegan Blueberry Cheesecake

Ingredients

  • 2 cups of raw cashews
  • 1/2 cup frozen blueberries
  • 1/4 cup raw agave nectar (or maple syrup instead)
  • 1/4 cup raw macadamia nuts
  • 1/4 cup raw walnuts
  • 1 tablespoon extra virgin coconut oil
  • 2 pitted dates
  • pinch of sea salt (optional)

Preparation

  1. Soak cashews for 8 hours and add to blender

  2. Add blueberries to blender

  3. Add agave nectar (or maple syrup) to blender

  4. For the crust: Add nuts to food processor

  5. Add coconut oil to food processor

  6. Add dates to food processor

  7. Add sea salt to food processor

  8. Pulse until coarsely chopped

  9. Coat springform molds with coconut oil

  10. Press crust into mold

  11. Add blueberry mixture to the mold

  12. Freeze overnight

  13. Transfer to refrigerator

  14. Add strawberries or other fruit and enjoy
