Sheet Pan Meal Prep Chicken Burritos
Ingredients
- 3 pounds chicken breast
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 2 tbsp olive oil
- 2 tbsp fajita seasoning
- 1 cup cheese of choice
- 6-8 tortillas
Preparation
Preheat your oven to 425ºF.
In a small bowl, add the chicken cut into cubes or strips and coat with the fajita seasoning. Then add the veggies to a bowl and drizzle with 2 tbsp olive oil.
Line a sheet pan with parchment paper and add the chicken and veggies.
Bake the pan for 20-25 minutes until the chicken reaches an internal temperature of 165°F.
To assemble, fill each tortilla with chicken, veggies, and cheese.
Tightly roll the filled tortillas and place them sealed side down on a sheet pan lined with fresh parchment paper, removing the parchment paper from the chicken and veggies.
Brush the rolled wraps with oil or butter and bake for 8-10 minutes at 425ºF.
Storage tips
Remove from the oven and let cool if you’re going to store them in the freezer. If you are, wrap tightly individually in aluminum foil and place them all inside a larger ziplock bag.
