The Best Vegan Meatloaf Ever
Ingredients
Vegetables
- 1 cup baby bella mushrooms
- 1 medium carrot
- 2 stalks celery
- 2 (15-oz) cans chickpeas
- 1/4 cup parsley
- 1/2 yellow onion
Condiments
- 1/4 cup barbecue sauce
- 1/4 cup ketchup
- 2 tbsp low-sodium soy sauce
- 1 tbsp vegan worcestershire sauce
Spices and seasonings
- 1 black pepper, freshly ground
- 1 kosher salt
- 1/2 tsp smoked paprika
Oils
- 1 tbsp extra-virgin olive oil
Breadcrumbs
- 1 cup panko bread crumbs
Preparation
Preheat the oven to 375°F
Heat oil in a skillet and sauté onions, carrots, celery, and mushrooms until softened
Mash the chickpeas and mix with the sautéed vegetables, parsley, spices, sauces, and breadcrumbs
Form the mixture into a loaf shape in a baking dish
Bake for 40-50 minutes or until golden brown and firm
Optionally, brush with barbecue sauce or ketchup during the last 10 minutes of baking for glaze
