Caramel Apple Breakfast Pizzas

Ingredients

  • 2 cups rolled oats
  • 2 tablespoons chia seeds
  • 1/8th teaspoon sea salt (pinch)
  • 1/4 teaspoon cinnamon
  • 4 ounces room-temperature unsweetened applesauce (if it's cold, it will solidify the coconut oil)
  • 1 tablespoon melted coconut oil
  • 2 tablespoons maple syrup
  • 1/4 teaspoon vanilla extract
  • for apples:
  • 2 medium apples, peeled & chopped into 3/4
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract

Preparation

  1. Preheat oven to 375 and line a baking sheet with nonstick parchment paper

  2. Add 1 cup oats to a blender or food processor and pulse until they form a flour consistency

  3. Add oat flour to a mixing bowl, along with remaining cup oats, chia seeds, sea salt and cinnamon

  4. In a separate bowl, whisk together applesauce, coconut oil, maple syrup and vanilla extract

  5. Add wet ingredients to dry and stir until it forms a sticky dough--it will seem to dry at first, but just keep mixing

  6. Use a water-dampened 1/3 cup measuring scoop to make four equal-sized rounds of dough

  7. Dampen hands with water and press each round into a circle a little less than 5” in diameter

  8. Bake for 15-18 minutes, 15 if you want a softer consistency (my preference), 18 if you like some crunchier edges

  9. Allow to cool 10 minutes before serving

  10. For apples:

  11. Heat a large saute pan to medium heat and add 1/3 cup water

  12. When water is bubbling, add apples to the pan

  13. Cook, stirring every minute or so, until apples are softened with some golden-brown edges, approximately 10 minutes

  14. Feel free to add splashes of water throughout the cooking process to prevent sticking/burning

  15. Add remaining ingredients and another splash of water

  16. Cook, stirring every minute or so, another 5 minutes

  17. Remove from the heat and allow to cool 5 minutes before serving

  18. Top pizzas with caramel apples and a smear of almond butter and enjoy!
