Carrot and Ginger Soup with Orange and Turmeric

Ingredients

  • 4-5 carrots peeled and sliced
  • 1 potato diced
  • 2 green onions
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp grated ginger
  • 3 cups vegetable or chicken stock
  • 1 orange juiced
  • 1 tsp grated fresh turmeric
  • Parsley, dill or green onion for topping

Preparation

  1. Peel, dice and chop all veggies and add with the stock, salt and pepper to a pot.

  2. Bring to a boil and simmer for about 20 minutes.

Tips

  1. This soup is very tasty with ginger, carrot, and orange juice.

  2. The potato thickens it nicely.
