Fajita Veggies and Beans

Ingredients

  • 1 cup black beans
  • 1 Thinly sliced green pepper
  • 1/2 red onion, thinly sliced
  • 4 tsp of fajita mix, divided
  • Pinch of salt
  • Juice of one lime

Preparation

  1. In a pan add in onions and green peppers

  2. Sauté until onion softens

  3. Add in 2 tsp fajita seasoning and continuously stir until veggies are coasted with seasoning

  4. Remove from heat and sprinkle with salt and fresh lime juice

  5. Repeat this process with the black beans

  6. Warm beans through on the stove top with a splash of veggie broth

  7. Add in remaining fajita seasoning and cook for 2-3 minutes

  8. Remove from what, sprinkle some salt and remaining lime juice
