Low FODMAP Goji Berry and Walnut Bliss Balls

Ingredients

  • 1 cup activated walnuts
  • 1/4 cup sundried goji or cranberries
  • 1/4 cup activated sunflower seeds
  • 1 tbsp chia seeds
  • 2 tbsp raw cacao powder
  • 3 tbsp of your favourite nut butter
  • water as needed
  • 1 cup organic desiccated coconut for rolling
  • pinch of Himalayan sea salt

Preparation

  1. Place the nuts and seeds into a food processor and pulse until the nuts are roughly chopped but not until they begin to form a powder so pulse gradually.

  2. In a large bowl combine the nuts, goji berries, chia seeds, salt, cacao and mix well.

  3. Spoon in the nut butter spread and mix well. If you find the mixture is a little dry then add a tablespoon of water.

  4. Roll the mixture into small balls using your hands and roll the balls in a bowl of desiccated coconut, ensuring they are entirely covered. Place the balls in an airtight container in the fridge until you’re ready to devour them.
