Nutritious Carrot Cake Cookies for Breakfast Treat

Ingredients

  • 1 cup rolled oats
  • 3/4 cup plain flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup maple syrup
  • 1/4 cup almond milk
  • 1/4 cup veg oil
  • 1 cup grated carrots
  • 1 cup raisins
  • 1/2 cup chopped walnuts

Preparation

  1. Preheat oven to 180C

  2. To a big bowl, add the oats and sieve in the flour, baking powder, cinnamon and salt. Mix.

  3. In a smaller bowl whisk together the egg, vanilla, maple syrup, milk and oil.

  4. Pour the wet mix into the dry mix and using a whisk, mix till just combined but don’t overmix

  5. Using a spatula, fold in the carrots, raisins and walnuts

  6. Bake for 15 minutes till just golden

  7. Let them cool a little and then transfer to a wire rack to cool completely.

Tips

  1. This recipe is adaptable and can be modified based on preference.

  2. You can leave out raisins if desired.

  3. Adjust the amount of cinnamon and maple syrup to suit your taste.
