Pb Chocolate Bars

Ingredients

  • 1 1/4 c @santacruzorganic creamy peanut butter (unsweetened)
  • 1 tbsp @simplyorganicfoods madagascar vanilla
  • 1/4 c @justdatesyrup (or maple syrup or agave)
  • pinch of salt
  • 1/2 c @bobsredmill gf rolled oats
  • 1/2 c @arrowheadmills oat flour (or almond flour)
  • chocolate topping ?
  • 1 c @lilys_sweets keto sugar free vegan chocolate chips
  • 1 1/2 tbsp coconut oil
  • 1 tsp @simplyorganicfoods madagascar vanilla

Preparation

  1. Warm the peanut butter in the microwave for 30 seconds or so to soften

  2. Add in the next 5 ingredients and use a hand mixer to combine

  3. Press into an 8x8 glass baking dish. Flatten with a spatula

  4. Add chocolate chips and coconut oil to a microwaveable dish and heat in 30 second increments until melted. (Can also do in a saucepan on stove top). Stir in vanilla

  5. Pour melted chocolate over the peanut butter mixture. Place in freezer for 1 hour

  6. Remove, slice into bars and store in the fridge
