Pb Chocolate Bars
Ingredients
- 1 1/4 c @santacruzorganic creamy peanut butter (unsweetened)
- 1 tbsp @simplyorganicfoods madagascar vanilla
- 1/4 c @justdatesyrup (or maple syrup or agave)
- pinch of salt
- 1/2 c @bobsredmill gf rolled oats
- 1/2 c @arrowheadmills oat flour (or almond flour)
- chocolate topping ?
- 1 c @lilys_sweets keto sugar free vegan chocolate chips
- 1 1/2 tbsp coconut oil
- 1 tsp @simplyorganicfoods madagascar vanilla
Preparation
Warm the peanut butter in the microwave for 30 seconds or so to soften
Add in the next 5 ingredients and use a hand mixer to combine
Press into an 8x8 glass baking dish. Flatten with a spatula
Add chocolate chips and coconut oil to a microwaveable dish and heat in 30 second increments until melted. (Can also do in a saucepan on stove top). Stir in vanilla
Pour melted chocolate over the peanut butter mixture. Place in freezer for 1 hour
Remove, slice into bars and store in the fridge
