Quick Pizza Muffins with Fresh Tomato and Herbs
Ingredients
- 250g all-purpose flour
- 10g baking powder (2 teaspoons)
- 3g baking soda (1/2 teaspoon)
- 8g salt (1 teaspoon)
- 2 eggs
- 50ml olive oil
- 250ml milk
- 100g shredded mozzarella cheese
- 2 medium tomatoes, diced
- 1 medium onion, diced
- oregano or basil to taste
Preparation
Mix all ingredients and place the batter in cupcake molds
Add diced tomato and oregano (optional)
Bake in a preheated oven at 180Β°C for 30 minutes or until cooked through
