Quick Pizza Muffins with Fresh Tomato and Herbs

Ingredients

  • 250g all-purpose flour
  • 10g baking powder (2 teaspoons)
  • 3g baking soda (1/2 teaspoon)
  • 8g salt (1 teaspoon)
  • 2 eggs
  • 50ml olive oil
  • 250ml milk
  • 100g shredded mozzarella cheese
  • 2 medium tomatoes, diced
  • 1 medium onion, diced
  • oregano or basil to taste

Preparation

  1. Mix all ingredients and place the batter in cupcake molds

  2. Add diced tomato and oregano (optional)

  3. Bake in a preheated oven at 180Β°C for 30 minutes or until cooked through
