Raw Vegan Lamington Slice
Ingredients
Base
- 1 cup of rolled oats (GF if needed)
- 1 cup of almond meal
- 2 scoops @macr0mike choc protein, optional*
- 1/2 cup cocao
- 1/4 cup maple syrup
- 25g melted vegan block (or coconut oil)
Coconut layer
- 1 1/2 cups of desiccated coconut
- 300g coconut yogurt
- 1 Tbsp coconut oil melted
Jam layer
- 4 Tbsp raspberry chia jam
Chocolate layer
- 1 block of intense dark chocolate
Preparation
In a food processor, blitz oats into a flour, then add the rest of the base ingredients until well combined. Press into a lined dish and refrigerate while preparing the next layer.
In a bowl, mix the coconut layer ingredients until combined and pour onto the base.
Spread the jam layer on top of the coconut layer and refrigerate.
Boil water in a saucepan and place a bowl on top to melt the chocolate. Once melted, pour the chocolate onto the top of the slice and refrigerate until solid.
