Raw Vegan Lamington Slice

Ingredients

Base

  • 1 cup of rolled oats (GF if needed)
  • 1 cup of almond meal
  • 2 scoops @macr0mike choc protein, optional*
  • 1/2 cup cocao
  • 1/4 cup maple syrup
  • 25g melted vegan block (or coconut oil)

Coconut layer

  • 1 1/2 cups of desiccated coconut
  • 300g coconut yogurt
  • 1 Tbsp coconut oil melted

Jam layer

  • 4 Tbsp raspberry chia jam

Chocolate layer

  • 1 block of intense dark chocolate

Preparation

  1. In a food processor, blitz oats into a flour, then add the rest of the base ingredients until well combined. Press into a lined dish and refrigerate while preparing the next layer.

  2. In a bowl, mix the coconut layer ingredients until combined and pour onto the base.

  3. Spread the jam layer on top of the coconut layer and refrigerate.

  4. Boil water in a saucepan and place a bowl on top to melt the chocolate. Once melted, pour the chocolate onto the top of the slice and refrigerate until solid.
