The Best Vegan Meatloaf Ever

Ingredients

Vegetables

  • 1 cup baby bella mushrooms
  • 1 medium carrot
  • 2 stalks celery
  • 2 (15-oz) cans chickpeas
  • 1/4 cup parsley
  • 1/2 yellow onion

Condiments

  • 1/4 cup barbecue sauce
  • 1/4 cup ketchup
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp vegan worcestershire sauce

Spices and seasonings

  • 1 black pepper, freshly ground
  • 1 kosher salt
  • 1/2 tsp smoked paprika

Oils

  • 1 tbsp extra-virgin olive oil

Breadcrumbs

  • 1 cup panko bread crumbs

Preparation

  1. Preheat the oven to 375°F

  2. Heat oil in a skillet and sauté onions, carrots, celery, and mushrooms until softened

  3. Mash the chickpeas and mix with the sautéed vegetables, parsley, spices, sauces, and breadcrumbs

  4. Form the mixture into a loaf shape in a baking dish

  5. Bake for 40-50 minutes or until golden brown and firm

  6. Optionally, brush with barbecue sauce or ketchup during the last 10 minutes of baking for glaze
