Vegan Snow Bunnies Cookies with Coconut
Ingredients
- 2 1/2 cups of all-purpose flour
- 1 1/4 cup of turbinado sugar
- 3/4 tsp of baking soda
- 3/8 tsp of aluminum free baking powder
- 3/4 cup plus 2 tbs of vegan spread (we used @earthbalance)
- 1 flax egg
- 3/4 tsp of vanilla extract
- Confectioners sugar
- Coconut flakes
Preparation
Preheat oven to 375 ° . In a large mixing bowl combine all dry ingredients and stir well. Next add in all wet ingredients and stir well.
Knead until dough forms. On a floured surface roll out dough with a bunny cookie cutter(or whatever shape you desire). Repeat process until finished. Remove shapes and transfer to a baking sheet.
Place cookies in oven for 10 minutes. Once time is up remove cookies and allow 5 minutes to cool.
Top cookies with confectioners sugar and coconut flakes and enjoy
