Tuna Frittata for Family and Little Ones

Ingredients

  • 2 spring onions, finely chopped
  • Large handful of green beans, chopped
  • 1 x 185g tin tuna in oil, drained
  • 1 tbsp red wine vinegar
  • 6 eggs, whisked
  • Small handful of fresh parsley, finely chopped

Preparation

  1. Serves 2 adults and 2 little ones.

  2. Preheat the grill to high, and drizzle some oil in a small non-stick frying pan on a medium heat.

  3. Add the spring onions and green beans to the pan and cook for 2 minutes.

  4. Stir in the tuna and vinegar, breaking the tuna chunks apart with a wooden spoon.

  5. Pour in the eggs and parsley, stir, and cook for 3-4 minutes.

  6. Once the edges begin to cook, place the pan under the grill for a minute or two, until there’s no more runny egg on top.

  7. Allow to cool then serve.
