Tuna Frittata for Family and Little Ones
Ingredients
- 2 spring onions, finely chopped
- Large handful of green beans, chopped
- 1 x 185g tin tuna in oil, drained
- 1 tbsp red wine vinegar
- 6 eggs, whisked
- Small handful of fresh parsley, finely chopped
Preparation
Serves 2 adults and 2 little ones.
Preheat the grill to high, and drizzle some oil in a small non-stick frying pan on a medium heat.
Add the spring onions and green beans to the pan and cook for 2 minutes.
Stir in the tuna and vinegar, breaking the tuna chunks apart with a wooden spoon.
Pour in the eggs and parsley, stir, and cook for 3-4 minutes.
Once the edges begin to cook, place the pan under the grill for a minute or two, until there’s no more runny egg on top.
Allow to cool then serve.
