Turkey and Mung Bean Chili

Ingredients

  • 500g turkey mince
  • 2 cups dried mung beans or lentils
  • 400g chopped tomatoes
  • 200ml water
  • Assorted vegetables
  • Stock cube
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tbsp balsamic vinegar
  • 2 tsp dried oregano
  • Chili

Preparation

  1. Brown the mince and add the onion and garlic.

  2. Add chopped tomatoes, mung beans, and water.

  3. Bring to a simmer while you prepare the vegetables.

  4. Chop whatever vegetables you have or use frozen ones.

  5. Add the vegetables along with a stock cube, cumin, coriander, turmeric, ginger, balsamic vinegar, oregano, and paprika, and add chili if wanted.

  6. Simmer until the mung beans are cooked, adding more water if needed.
