Turkey and Mung Bean Chili
Ingredients
- 500g turkey mince
- 2 cups dried mung beans or lentils
- 400g chopped tomatoes
- 200ml water
- Assorted vegetables
- Stock cube
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1 tbsp balsamic vinegar
- 2 tsp dried oregano
- Chili
Preparation
Brown the mince and add the onion and garlic.
Add chopped tomatoes, mung beans, and water.
Bring to a simmer while you prepare the vegetables.
Chop whatever vegetables you have or use frozen ones.
Add the vegetables along with a stock cube, cumin, coriander, turmeric, ginger, balsamic vinegar, oregano, and paprika, and add chili if wanted.
Simmer until the mung beans are cooked, adding more water if needed.
