Vegan Taco Pancakes

Ingredients

  • 1 banana, mashed (~90g), 1 tsp apple cider vinegar
  • 80g chickpea flour
  • 55g rice flour
  • 1/3 tsp baking powder
  • 1/4 tsp baking soda
  • 150ml soy milk (or other?) Sweetener of choice

Preparation

  1. Mix all ingredients

  2. Depending on the flour you use, you might need more plant milk

  3. Bake the pancakes in a well coated pan with a little bit of oil( optional)

  4. Serve with fillings/toppings of your choice
