Yummy Yummyyy "Fake” Afghan Flatbread Pizza

Ingredients

  • 2 big vegan flatbreads (you can even use vegan naan if you want)
  • 1 can of tomatoes
  • 1 can of chickpeas
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 medium sweet potato
  • 2 garlic cloves
  • 2 tsp harissa paste
  • 1 tsp garam masala
  • 1/2 tsp chilli powder
  • 1 tsp chilli flakes
  • fresh chopped coriander

Preparation

  1. Peel sweet potato, cut in small slices, dice yellow and red peppers, drain chickpeas, mix sweet potato, chickpeas and bell peppers with some olive oil, garam masala and chilli powder on baking tray. Pop in the over and roast for 25 minutes, toss halfway through. To make tomato sauce just combine chopped tomatoes from a can with harissa, cook on a low light for a few minutes, add garlic, salt and pepper to taste. Spread the sauce on the flatbread, top with roasted sweet potato, bell peppers and chickpeas, pop in the oven for 10 minutes on 180 degrees C. It’s ready! ? Top with fresh coriander and chilli flakes prior to serving
