Fake Afghan Flatbread Pizza with Vegetables

Ingredients

  • 2 big vegan flatbreads (you can even use vegan naan if you want)
  • 1 can of tomatoes
  • 1 can of chickpeas
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 medium sweet potato
  • 2 garlic cloves
  • 2 tsp harissa paste
  • 1 tsp garam masala
  • 1/2 tsp chilli powder
  • 1 tsp chilli flakes
  • fresh chopped coriander

Preparation

  1. Peel sweet potato and cut into small slices.

  2. Dice yellow and red bell peppers.

  3. Drain chickpeas.

  4. Mix sweet potato, chickpeas, and bell peppers with olive oil, garam masala, and chilli powder on a baking tray.

  5. Roast in the oven for 25 minutes, tossing halfway through.

  6. Combine chopped tomatoes from a can with harissa paste and cook on low heat for a few minutes.

  7. Add garlic, salt, and pepper to taste to the tomato sauce.

  8. Spread the sauce on the flatbread.

  9. Top with roasted sweet potato, bell peppers, and chickpeas.

  10. Bake in the oven for 10 minutes at 180 degrees C.

  11. Top with fresh coriander and chilli flakes before serving.
