apricot and almond bliss balls

Ingredients

  • 200g dried apricots
  • 50g ground almond
  • 75g desiccated coconut + 25g set aside for rolling
  • 2 tbsp honey

Preparation

  1. Place all ingredients into a food processor and blitz until and the mixture begins to clump together

  2. Use a tablespoon to scoop out some mixture then form into balls using your hands. Roll the balls in the extra desiccated coconut until coated all over

  3. Cover and chill in the fridge for an hour to firm up. Keep in an airtight container in the fridge for 5 days
