Apricot Flapjacks with Oats, Seeds and Honey
Ingredients
- 100g dried apricots, chopped
- 100g raisins
- 100g oats
- 25g sesame seeds
- 50g flaxseeds
- 1 tsp cinnamon
- 75g margarine
- 2 tbsp honey
- 1 egg
Preparation
Preheat oven to 200/Gas Mark 5. Grease and line a small baking tray. This mix half filled a 20cm square tin; if you don’t have a small tray, just don’t fill the whole tin.
Mix all the dried ingredients together (dried fruit, oats, seeds and cinnamon).
Weigh out butter and honey, melt in the microwave for 1 minute and stir.
Beat the egg. Mix the wet ingredients into the dry and put into the tin. Ensure it is a nice thick layer.
Bake for 30 minutes, covered with grease proof paper or foil for the first 15 minutes and uncovered for the rest.
Leave to cool a little then slice and lift out of the tin.
