Apricot Flapjacks with Oats, Seeds and Honey

Ingredients

  • 100g dried apricots, chopped
  • 100g raisins
  • 100g oats
  • 25g sesame seeds
  • 50g flaxseeds
  • 1 tsp cinnamon
  • 75g margarine
  • 2 tbsp honey
  • 1 egg

Preparation

  1. Preheat oven to 200/Gas Mark 5. Grease and line a small baking tray. This mix half filled a 20cm square tin; if you don’t have a small tray, just don’t fill the whole tin.

  2. Mix all the dried ingredients together (dried fruit, oats, seeds and cinnamon).

  3. Weigh out butter and honey, melt in the microwave for 1 minute and stir.

  4. Beat the egg. Mix the wet ingredients into the dry and put into the tin. Ensure it is a nice thick layer.

  5. Bake for 30 minutes, covered with grease proof paper or foil for the first 15 minutes and uncovered for the rest.

  6. Leave to cool a little then slice and lift out of the tin.
