Breakfast Banana Cookies with Oats and Almond Butter

Ingredients

  • 1 very ripe banana
  • 1 cup of oats
  • 1/2 cup almond butter
  • 3 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch of salt

Preparation

  1. Preheat your oven to 175°C.

  2. Mash the banana and maple syrup together.

  3. Melt the coconut oil and stir in the almond butter until combined.

  4. Add the oil and butter mixture to the banana mixture and combine well.

  5. Add the dry ingredients and fold until just mixed.

  6. Using a tablespoon, scoop the mixture, form into balls, place on a baking tray, and press down to about 3 cm thick.

  7. Bake for 15-20 minutes until lightly golden.

  8. Enjoy as a snack or crumble with yogurt for breakfast.
