Carrot Cake Bars

Ingredients

  • Crust
  • * 1 cup walnuts
  • * 3/4 cup dates
  • * 1/4 cup raisins
  • * 1/2 tsp cinnamon
  • * 1 cup shredded carrots * 1/2 tsp vanilla extract
  • * 1 tbsp melted coconut oil
  • Filling
  • * 2 cups soaked cashews
  • * 1 tsp Vanilla extract
  • * 1 cup Almond milk
  • * 3 tbsp maple syrup

Preparation

  1. Blitz walnuts in a food processor until coarse. Add the rest of the crust ingredients and blend until sticky and a ball starts to form. Press evenly into a parchment lined baking pan

  2. In a blender, combine all filling ingredients and blend until creamy. Pour filling over crust and spread evenly. (Optional): sprinkle over shredded coconut, lemon zest, and chopped walnuts

  3. Place in freezer for 30 min. to firm up
