Carrot Cake Bars
Ingredients
- Crust
- * 1 cup walnuts
- * 3/4 cup dates
- * 1/4 cup raisins
- * 1/2 tsp cinnamon
- * 1 cup shredded carrots * 1/2 tsp vanilla extract
- * 1 tbsp melted coconut oil
- Filling
- * 2 cups soaked cashews
- * 1 tsp Vanilla extract
- * 1 cup Almond milk
- * 3 tbsp maple syrup
Preparation
Blitz walnuts in a food processor until coarse. Add the rest of the crust ingredients and blend until sticky and a ball starts to form. Press evenly into a parchment lined baking pan
In a blender, combine all filling ingredients and blend until creamy. Pour filling over crust and spread evenly. (Optional): sprinkle over shredded coconut, lemon zest, and chopped walnuts
Place in freezer for 30 min. to firm up
