Festive Holiday Salad with Brussels and Pomegranate

Ingredients

  • Thinly shaved Brussels sprouts
  • Baby arugula
  • Pomegranate seeds
  • Sweet red apple, thinly sliced
  • Toasted pine nuts
  • Green onion

Dressing components

  • 1/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 small shallot
  • 1.5 tablespoons pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt

Preparation

  1. Thinly shave the Brussels sprouts.

  2. Slice the sweet red apple thinly.

  3. Toast the pine nuts.

  4. Puree all dressing components in a mini-food processor to make the balsamic dressing.

  5. Combine all salad ingredients in a bowl.

  6. Toss the salad with the prepared dressing.

  7. Optionally, add more nuts, seeds, quinoa, or crispy chickpeas to increase bulk.
