Simple Sheet Pan Brunch with Eggs and Veggies

Ingredients

  • 1 large sweet potato or 2 small sweet potatoes
  • Avocado oil
  • Salt
  • Bell peppers
  • Tomatoes
  • A few eggs
  • Avocado (for topping)
  • Cheese (e.g., from Siete Foods)
  • Hot sauce (e.g., from Yellowbird)
  • Cilantro (for topping)

Preparation

  1. Preheat oven to 450F.

  2. Peel and cut sweet potatoes into thin slices, toss with avocado oil and salt, place on a sheet pan, and bake for 20 minutes, flipping halfway through.

  3. Add bell peppers and tomatoes on top of the potatoes and bake for an additional 7 minutes.

  4. Crack eggs on top and return to the oven until eggs are cooked to your desired doneness.

  5. Remove from oven and add desired toppings such as avocado, cheese, hot sauce, cilantro, and salt. Enjoy!
