Spicy Vegetable Chimichangas in the Air Fryer

Ingredients

  • 24 oz veggie blend (zucchini, yellow squash, red onion, red bell pepper, and carrots, spaghetti cut
  • 10oz can rotel, drained
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp granulated garlic
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 cups mexican cheese
  • 8 flour taco tortillas

Preparation

  1. In an oiled frying pan, cook vegetables for 10-15 minutes

  2. Add rotel, seasonings and cheese

  3. Mix until combined

  4. Add the mixture to the middle of each tortilla

  5. Fold the tortillas up to be sure that all of the mixture is securely inside

  6. Spray each tortilla with avocado oil spray

  7. Place the chimichangas seam side down into the air fryer

  8. Cook at 350 degrees for 10 minutes

  9. Once done they should be lightly browned on top and the tortilla will be nicely secured

  10. Top with queso, salsa, taco sauce, quacamole, and/or sour cream
