Spinach Almond Sunflower and Pumpkin Seed Bread
Ingredients
- 3 cups leafy greens (spinach or kale)
- 1/4 cup flax seeds
- 1 cup almonds
- 1/2 cup sunflower seeds
- 2 tsp baking powder
- 1/4 tsp sea salt
- 4 eggs or 4 chia eggs
- 1/4 cup coconut oil
Preparation
Preheat the oven to 200°C.
Add the greens to a food processor and blitz on high speed until finely broken down.
Add the nuts, seeds, salt and baking powder and blend on a medium-low speed until well combined and the nuts have broken down to form coarse meal.
Add eggs and coconut oil and blend on a medium speed until well incorporated.
Grease a small loaf tin (8 x 20cm).
Spoon the mixture into the tin, it should fill just over halfway.
Place tin in the oven to bake for approximately 25 minutes or until the skewer comes out clean when inserted into the middle of the loaf.
Remove from tin onto wire rack to cool before slicing.
Tips
It makes great avocado toast.
For croutons: dice the bread, drizzle with olive oil and salt flakes, and toast in the oven at 200°C for 10 to 15 minutes.
