Thai-Style Crispy Sweet Oyster Mushrooms
Ingredients
- 350g oyster mushrooms
- 1/2 cup white sugar
- 1 tbs sweet soy sauce (or kecap manis)
- dash of light soy sauce
Preparation
Wash mushrooms. Get a heavy pan (like a cast-iron skillet) very very very hot add tablespoon or two of oil then add in the mushrooms. With another pan press them down hard for around 1 - 2 minutes. Turn them over and repeat. They should be nicely seared on both sides. Set aside.
Heat up a wok or pot - do not add oil. Add sugar in a continue to stir for a minute or two until it caramelises. Note - a few drops of lime juice will prevent the sugar from hardening, but if you don't have any don't worry.
Add a splash (about 2 tablespoons) of water or stock to the caramelised sugar then add in your mushrooms and mix well. Season with your sweet soy sauce and light sauce sauce and you're done.
