Vegan Ancient Grain Chili
Ingredients
- 3/4 cup uncooked quinoa, rinsed*
- 2 tablespoons olive or avocado oil
- 1 red onion, finely chopped
- 2 jalapeños, cored and finely chopped
- 2 bell peppers, cored and finely chopped
- 3 garlic cloves, minced
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 28 ounces diced tomatoes
- 8 ounces tomato sauce
- 2 cups vegetable broth
- 2 tablespoons apple cider vinegar
- 2 15-ounce cans beans
- corn
Preparation
Begin by cooking your quinoa, and whilst it is simmering, warm your oil in a large pot and add your onion, peppers, and garlic. Stir well until cooked, and add spices after 3 minutes.
Pour in your diced tomatoes, tomato sauce, and veggie broth. Cook for 5 minutes and then add your beans, corn, cooked quinoa, apple cider vinegar, and cook entirely for about 5 more minutes.
Serve and top with avocado, vegan sour cream, lime, and anything else for extra flavor.
