Vegan Ancient Grain Chilli
Ingredients
- 3/4 cup uncooked quinoa, rinsed*⠀
- 2 tablespoons olive or avocado oil⠀
- 1 red onion, finely chopped⠀
- 2 jalapeños, cored and finely chopped⠀
- 2 bell peppers, cored and finely chopped⠀
- 3 garlic cloves, minced⠀
- 2 tablespoons chili powder⠀
- 2 teaspoons ground cumin⠀
- 1 teaspoon dried oregano⠀
- 1 teaspoon smoked paprika⠀
- 28 ounces diced tomatoes⠀
- 8 ounces tomato sauce⠀
- 2 cups vegetable broth⠀
- 2 tablespoons apple cider vinegar⠀
- 2 15-ounce cans beans⠀
Preparation
Begin by cooking your quinoa, and whilst simmering, warm your oil in a large pot and add your onion, peppers, and garlic. Stir well until cooked, and add spices after 3 minutes.⠀
Pour in your diced tomatoes, tomato sauce, and veggie broth. Cook for 5 minutes and in your beans, corn, cooked quinoa, acv, and cook entirely for about 5 more minutes.⠀
Serve and top with avocado, vegan sour cream, lime, and anything to add that extra bit of deliciousness
