Double Chocolate Cookies

Ingredients

  • 150gms butter
  • 100gms coconut sugar
  • 2 eggs
  • 200gms self raising flour
  • 50gms raw cacao powder
  • 100gms white chocolate - cut into about 10 equal chunks

Preparation

  1. Pre-heat the oven to 170’c (fan)

  2. Line a baking tray

  3. First cream the butter & sugar together

  4. Next, add the sugar, eggs, flour & cacao and form a dough and knees well (my kids love this part!)

  5. Pop the dough into the fridge for an hour

  6. Remove the dough from the bridge and form about 10 balls

  7. Flatten each ball individually in your hand and into the middle pop 1 of the white chocolate chunks and bring the cookie dough over to cover the chocolate chunk

  8. Press the cookie into shape roughly

  9. Bake in the oven at 170’C for about 10-12 minutes
