Sourdough with Avocado and Tamari Mushrooms

Ingredients

Mushrooms

  • 250-300g chestnut mushrooms
  • 1 clove of garlic
  • 1 tablespoon olive oil
  • tamari sauce (generous splash)
  • 2 tablespoons thyme leaves
  • black pepper (sprinkle)

Avocado

  • 1 ripe avocado
  • juice of 1/2 lemon
  • pinch of sea salt or pink Himalayan salt

Bread

  • 2 slices of bread of your choice

Preparation

Mushrooms

  1. Wash and slice the mushrooms.

  2. Heat olive oil in a frying pan.

  3. Add crushed garlic and cook for 1 minute, stirring to prevent burning.

  4. Add sliced mushrooms and tamari sauce, cook for 8-10 minutes until water evaporates.

  5. Add fresh thyme and black pepper.

Avocado and assembly

  1. Mash avocado with a fork and add lemon juice and salt.

  2. Toast the bread.

  3. Spread avocado on toast and top with mushrooms.
