Sourdough with Avocado and Tamari Mushrooms
Ingredients
Mushrooms
- 250-300g chestnut mushrooms
- 1 clove of garlic
- 1 tablespoon olive oil
- tamari sauce (generous splash)
- 2 tablespoons thyme leaves
- black pepper (sprinkle)
Avocado
- 1 ripe avocado
- juice of 1/2 lemon
- pinch of sea salt or pink Himalayan salt
Bread
- 2 slices of bread of your choice
Preparation
Mushrooms
Wash and slice the mushrooms.
Heat olive oil in a frying pan.
Add crushed garlic and cook for 1 minute, stirring to prevent burning.
Add sliced mushrooms and tamari sauce, cook for 8-10 minutes until water evaporates.
Add fresh thyme and black pepper.
Avocado and assembly
Mash avocado with a fork and add lemon juice and salt.
Toast the bread.
Spread avocado on toast and top with mushrooms.
