Butternut Squash Curry with Naan Bread

Ingredients

  • Butternut squash
  • Oil
  • Salt
  • Pepper
  • Large white onion
  • 3 cloves garlic
  • 2 chillis
  • Turmeric
  • Curry powder
  • Garam masala
  • Pint of vegetable stock
  • Half can coconut milk
  • Chickpeas
  • Spinach
  • Peas

Preparation

  1. Chop butternut squash and roast it with oil, salt, and pepper.

  2. While roasting, fry a large white onion until soft.

  3. Add 3 cloves of garlic and 2 chillis to the onion.

  4. Add turmeric, curry powder, and garam masala.

  5. Add about a pint of vegetable stock, half a can of coconut milk, and chickpeas.

  6. Let it cook for about 10 minutes.

  7. Add spinach, peas, and the roasted butternut squash.
