Butternut Squash Curry with Naan Bread
Ingredients
- Butternut squash
- Oil
- Salt
- Pepper
- Large white onion
- 3 cloves garlic
- 2 chillis
- Turmeric
- Curry powder
- Garam masala
- Pint of vegetable stock
- Half can coconut milk
- Chickpeas
- Spinach
- Peas
Preparation
Chop butternut squash and roast it with oil, salt, and pepper.
While roasting, fry a large white onion until soft.
Add 3 cloves of garlic and 2 chillis to the onion.
Add turmeric, curry powder, and garam masala.
Add about a pint of vegetable stock, half a can of coconut milk, and chickpeas.
Let it cook for about 10 minutes.
Add spinach, peas, and the roasted butternut squash.
