Butternut Squash Curry with Vegan Naan Bread

Ingredients

  • Method for lazy cooks like me- I chopped a butternut squash and roasted in some oil
  • salt and pepper. Whilst that cooked
  • I fried a large white onion until it was soft then added 3 cloves of garlic and 2 chillis. Then
  • I added some turmeric
  • curry powder and garam masala. Then
  • I added about a pint of veg stock
  • half a can of coconut milk and chickpeas. I let that all cook for about 10 minutes before adding some spinach

  • and butternut squash ? was soooooo gooooood
