Butternut Squash Curry with Vegan Naan Bread
Ingredients
- Method for lazy cooks like me- I chopped a butternut squash and roasted in some oil
- salt and pepper. Whilst that cooked
- I fried a large white onion until it was soft then added 3 cloves of garlic and 2 chillis. Then
- I added some turmeric
- curry powder and garam masala. Then
- I added about a pint of veg stock
- half a can of coconut milk and chickpeas. I let that all cook for about 10 minutes before adding some spinach
