Cranberry Bread and Mango

Ingredients

  • 2/3 cup oats
  • 1 can (drained/rinsed) chickpeas
  • 1/4 cup
  • 2 tbsp maple syrup
  • 1/2 cup unsweetened applesauce
  • lots of cinnamon
  • and 1 tsp vanilla

Preparation

  1. To make the bread: In a food processor, blend 2/3 cup oats until they reach a flour consistency

  2. Remove from the processor/set aside

  3. To the food processor, add 1 can (drained/rinsed) chickpeas, 1/4 cup + 2 tbsp maple syrup, 1/2 cup unsweetened applesauce, lots of cinnamon, and 1 tsp vanilla

  4. Process until smooth, then mix in the oat flour by hand

  5. Stir in desired amount of frozen cranberries, pour batter into a loaf pan, and add more cranberries to the top

  6. Bake at 350F for ~30 mins
