Cranberry Bread and Mango
Ingredients
- 2/3 cup oats
- 1 can (drained/rinsed) chickpeas
- 1/4 cup
- 2 tbsp maple syrup
- 1/2 cup unsweetened applesauce
- lots of cinnamon
- and 1 tsp vanilla
Preparation
To make the bread: In a food processor, blend 2/3 cup oats until they reach a flour consistency
Remove from the processor/set aside
To the food processor, add 1 can (drained/rinsed) chickpeas, 1/4 cup + 2 tbsp maple syrup, 1/2 cup unsweetened applesauce, lots of cinnamon, and 1 tsp vanilla
Process until smooth, then mix in the oat flour by hand
Stir in desired amount of frozen cranberries, pour batter into a loaf pan, and add more cranberries to the top
Bake at 350F for ~30 mins
