Easy Plant-Based Cashew Pasta Sauce
Ingredients
- 1/2 cup cashews
- 1/2 cup unsweetened almond milk
- 1 tsp garlic powder
- 1 tsp nutritional yeast
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- chickpea pasta (e.g., Banza)
- kale
- Trader Joe's everyday seasoning
Preparation
Soak 1/2 cup cashews in water for 2-3 hours.
Rinse the cashews.
Add the rinsed cashews to a blender.
Add 1/2 cup unsweetened almond milk, 1 tsp garlic powder, 1 tsp nutritional yeast, 1/2 tsp sea salt, and 1/4 tsp black pepper to the blender.
Blend all ingredients together until smooth; add more almond milk if needed to thin the sauce.
Cook chickpea pasta according to package instructions.
Sauté kale until wilted, optionally using Trader Joe's everyday seasoning.
Serve the blended cashew sauce over the cooked pasta with the sautéed kale.
