Healthy Green Pea and Vegetable Patties

Ingredients

  • 2 cups frozen green peas
  • 100g coriander leaves
  • 50g mint leaves
  • 200g broccoli
  • 1/2 onion
  • 2 garlics chopped
  • 1 cup rolled oats
  • 1/4 cup oat flour (blended oats)
  • 1 cup breadcrumbs (blended bread/ gluten-free bread)
  • 1/2 toasted sunflower seeds & chopped
  • 1 tsp curry powder
  • 1 tsp soy sauce
  • Salt & pepper
  • Pinch chili flakes
  • 1 Tbsp white miso paste
  • 1/2 lemon zest

Preparation

  1. Roast the vegetables and garlic at 180C for 10 minutes.

  2. Blend it with the wet ingredients including herbs, but not too much to keep some texture like whole peas.

  3. Add this mixture to the dry ingredients and combine.

  4. Roll into balls or patties.

  5. Bake in the oven, pan fry, or use an air fryer until golden brown.

Tips

  1. If some ingredients are unavailable, use basil instead of mint or more soy sauce instead of miso. Feel free to experiment with variations.
