Loaded Tofu Chili with Kimchi Toppings

Ingredients

  • 1 onion
  • 1 green pepper
  • 1 block firm tofu
  • 3 cloves garlic
  • Tons of chili powder, cayenne, paprika, and cumin
  • 1 large can tomato sauce
  • 1 can chili beans
  • 1 can black beans (or any beans)
  • 1 small can tomato paste
  • 1 can diced chili tomatoes

Preparation

  1. Sauté the onion, green pepper, tofu, garlic, and spices together until the vegetables are soft and the tofu begins browning.

  2. Add the tomato sauce, chili beans, black beans, tomato paste, diced chili tomatoes, and more spices to taste.

  3. Serve loaded with kimchi, tortilla chips, cilantro, green onion, and avocado.
